With so many of us working from home, we're all looking for a few easy items to have on hand that are both nutritious & delicious. These energy bites are one of our favorites because of how easy they are to prep and how filling they are to eat.
15 Dates
1/2 Cup Pumpkin Seeds
1/2 Cup Coconut Flakes
1/4 Cup Raw Cacao Powder
1/4 Cup Almond Butter
1 Tsp Superfood Powder (of your choice!)*
Start by adding the pumpkin seeds and coconut to a food processor and process until crumbly. Add to a medium mixing bowl. Pit the dates and add to the food processor. Process until the dates form a "ball" (are completely blended). Add to the bowl alongside the cacao, almond butter and powder of your choice (I used *maca powder but spirulina, goji, collagen or a superfood blend would work too). Use a wooden spoon (or better yet, your hands!) and mix thoroughly. Shape into balls. Store in the refrigerator and ENJOY!
